RANCANG BANGUN MESIN TELUR ASIN BERBASIS PROPORTIONAL INTEGRAL DERIVATIVE

Proses pembuatan telur asin biasanya memerlukan waktu cukup lama, yaitu antara 15-21 hari sesuai dengan tingkat keasinan. Salah satu cara untuk mempercepat prosesnya memanipulasi tekanan osmotik. Cara osmotik merendamkan bebek dalam larutan asam cuka agar cangkang bagian luar terkelupas serta proses pengasinannya memanaskan tersebut suhu tertentu yang dikontrol kontrol Proportional Integral Derivative Zeigler-Nichols . Rancangan bangun mesin ini terdiri dari tiga diantaranya pertama direndam pH sebesar 2,4 selama 15 menit, kedua dimana pengasinan perbandingan batubata : abu gosok garam 1:1:2 24 jam kondisi 65℃, dan ketiga pemasakan 80℃ 5 jam. Lama keseluruhan rancang 1 21 menit menghabiskan daya 5,21 KWh biaya Rp 5731. Hasil keberhasilan 83,33% rincian 20 keadaan baik 4 retak. Serta hasil uji laboratorium didapatkan nilai kadar rata-rata 0,82 %, kandungan mikroba salmonella bernilai negatif staphyloccus aureus 6 koloni/25g atau 0,24 koloni/g.
